Lavender and Orange biscuits

I love adding Lavender to my food I always think it gives your food that taste of summer and Provence, I found a recipe for these biscuits and tweaked it a little to veganize it, they are so simple and delicious.

75g Sugar

75g Vegan Margarine

1 egg replacer (I usually use flax seed 1 tbs flaxseed mixed with 3 tbs water and mixed to gloopy consistencey)

Zest and juice of 1/2 Orange

100g Plain Flour

1tsp dried Lavender

1. Whisk butter and sugar until pale and creamy

2. Mix in Orange zest and juice and egg replacement mixture

3. Fold in flour and dried Lavender

4. Drop teaspoons of mixture onto baking parchement and bake for 15-20 mins until golden around the edges.Image
