Feeding the soul

Finding time to blog over the last 12 months has been nigh on impossible. My mum had been in nursing care and I spent all my spare time visiting her.

However mum passed away before Christmas and the last month has been the hardest time of my life, I miss her every day and have had no interest in anything, I have just wanted to curl up in a ball. I know my mum wouldn’t want this for me Mum was a person who lived life to the max, her days were active and filled doing all the things she loved.

Over the last week my love of cooking is awakening again and I want to get back to blogging all the stuff I’m making, today was a good day I made beetroot falafel and Houmous a step in the right direction, I want to dismiss the myth that vegan food is expensive.

I had a bunch of beetroot left in the fridge and out of it I made the above and still have enough to make a chocolate beet cake not bad for the princely sum of £1.75.

I find cooking is easing my soul during this hard time, that and long walks are getting me through these dark days of grieving cooking really does feed the soul.
